The organization was developed to highlight Atlantic City's musical heritage. Its name is derived from the Missouri Avenue beach where African Americans through the early 1950's were socially restricted. The beach became affectionately nicknamed "Chicken Bone Beach" as thousands of vacationing families flocked to the shore with their chicken-laden picnic hampers. The organization's collection specializes in African American musicians and entertainers who performed in Atlantic City. The foundation presents free summer jazz concerts on the Atlantic City boardwalk on Thursday nights featuring musicians of national and international repute. It also co-sponsors a summer Jazz Camp for young musicians and has plans to develop a museum.
